Bloat Free Blueberry Oat Pancakes
When I first started changing my eating habits I was distraught over having to remove pancakes from my diet. My mother used to make them for us on Sundays, it was just something I could always count on. It’s not something I like to talk about, but there was a point in time when I only wanted to eat pancakes, and I kinda did. Not my most proud moments, but I always felt happiness when I had them. The only problem was I started to gain weight, and lots of it.
Once I started my journey to lose weight, I would treat myself to pancakes once or twice a month, but when I went vegan, I jumped on the idea of finding a pancake recipe I didn’t have to feel guilty about. And by that, I mean, eat regularly! With my mothers help, of course, we found a recipe that is plant-based, taste amazing, and is bloat free!
Fast forward to me eating my pancakes. I layered 3 fluffy pancakes and spread peanut butter over the top. I grabbed the maple syrup and drizzled a generous amount. I watch the maple spread down the pancakes and reached for my fork with anticipation. When I took a bite the pancake melted into my mouth. There was the perfect amount of banana and spices that removed the unwanted grain flavor some pancakes carry. I regularly daydream about these pancakes; I’m doing it now. SO GOOD! I don’t think I will ever be able to enjoy pancakes as much as I enjoy these, and the best part is no bloat! Eat on hungry people, its guilt free! No animals were harmed in the making of this meal!
Honestly, I love these pancakes. They are the best. Not too long ago I didn’t like anything banana flavor, but since transitioning to vegan I love everything banana. (same goes for coconut) Just saying, I will be making these in the afterlife as well.
If you want your pancakes topped with a dolip, pop a coconut milk in the fridge the night before. When chilled he coconut milk forms a thick cream at the top that makes for a good cool whip like topping.
As kids we put peanut butter on our pancakes and our cousins would think we were weird. What are your favorite pancake toppings?
